I’m a cookie dipper. I absolutely LOVE dipping cookies into my coffee. I took a recipe off the pack of the Arrowhead Mills spelt flour package and completely changed the recipe to make it my own. I reduced the amount of sugar, added some oatmeal and seeds. These cookies are to die for! Enjoy and let me know what you think!!

Nadine’s Awesome Cookies

Preheat Oven to 350F Degrees

Ingredients:

1/2 Cup Butter Softened
1/4 Cup Raw Sugar
1 Egg
1 Tsp. Vanilla Extract
1/2 Tsp. Baking Powder
1 1/2 Cups Spelt Flour (I use Arrowhead Mills)
1/3 Cup Oatmeal (not instant)
1/2 Tsp. Sea Salt (I use Celtic Sea Salt)
1/2 Cup Chocolate Chips
1/4 Cup Pumpkin Seeds
1/4 Cup  Sunflower Seeds
1 Tbls. Ground Flax Seed
1 Tbls. Water-if needed

Directions:
In a large mixing bowl, beat butter with sugar, egg and vanilla extract. Blend flour, baking powder and salt. Stir well. Fold in chocolate chips, sunflower seeds, pumpkin seeds and flax seed. You made need to add a bit of water if it doesn’t all stick together. Drop cookies on a oiled cookie sheet (I use a baking spray with flour in it). Make them as big or small as you’d like. Bake 10-12 minutes or until done. Enjoy!!!!
